Frequently Asked Questions
What cuts are included in a whole beef? Whole sides of beef are cut to order based on your preferences and the services available from processors. A whole beef could have a number of cuts from steaks to roasts to specialty cuts and more. This handy chart from the American Angus Association details the possibilities!
Typically, a whole beef from Scott Farms includes about 500 pounds of delicious meat. A whole beef has a limited amount of loin, rib, sirloin, round, chuck and other areas. So, the number of cuts you'll get from these areas depends on your cutting preferences. If you prefer not to include certain cuts in your order, they can easily be made into ground beef.
What cuts are included in a half of a side of beef? A half of a side of beef is also cut to order based on your preferences and the services available from processors. The same possibilities for cuts are available in a half as in a whole beef, you'll simply get half of the amount! Typically, a half of a side of beef from Scott Farms includes approximately 250 pounds of delicious meat.
Can I buy a quarter side of beef? Because a quarter side of beef can be challenging to split in a way that includes a variety of beef cuts, we encourage you to find a family member, friend, or neighbor to share a half of a side of beef. If you're interested in a smaller amount of beef and want to learn more about ordering a quarter beef, please contact us.
What if I just want a few steaks? During the summer months, we participate in local farmer's markets on Saturdays where you can purchase individual cuts of meat. Check our Facebook page for updates about where we'll be and available cuts! Learn more about beef cuts with the Interactive Butcher Counter from the Cattlemen's Beef Board and National Cattlemen's Beef Association.
How does Scott Farms beef grade for quality? The beef industry uses a standard set of quality grades overseen by the U.S. Department of Agriculture to determine the quality of beef -- prime, choice and select. While the opportunity to have Scott Farms beef graded by a USDA grader is limited, we take pride in the fact that our beef has consistently graded high choice and prime when it is graded.
Where is your beef processed? Scott Farms works closely with two processing facilities in southern Ohio, Manning Packing Co. and R&C Packing. These family-owned and operated businesses are important partners in getting great beef from our farm to your table!
